I am a practicing Urasenke chado (Japanese tea ceremony) student. My Japanese friends, who take lessons with me, always bring back sweets from Japan when they go home to visit. My favorite winter sweet is a persimmon stuffed with chestnut filling. Each piece is wrapped in the most intricate manner. These are the Fuyu persimmons, the squat, round ones which are sweet even when hard, while the Hachiya persimmons are more oval shaped and pointy like a large acorn. These are only sweet when they turn into a gooey pudding when fully ripe. I will be going to Japan October 2009, and I sure hope to find some of these persimmon sweets so that I might have more than ONE this year.
