Plucking takes place when the tea bushes break winter's dormancy around the time of Ching Ming, the Festival of Purity and Brightness. After steeping, gently open a bud and discover the beginning of three leaves. It is the most natural form of tea processed for consumption, reputed to be higher in antioxidants and lower in caffeine content than green teas. |
